In need of a sauce to go with my baked potatoes, I cooked up a delicious and simple barbecue sauce.  The recipe is from The Vegan Corner and I just left out the salt and substituted maple syrup for the golden syrup.  The video shows how simple it really is to prepare this saucy yumminess.

Bbq sauce has always come from the supermarket in my world and I’ve never been comfortable with all the unknowns in retail processed foods. This way I get to control the amount of salt and I cook it with no oil.  It’s so easy that you have to try it.

Saucy recipe

30g onions
3 cloves garlic
200 ml tomato passata
100g granulated sugar
1/2 tsp smoked paprika
1/4 tsp Dijon mustard
1/4 tsp black pepper
1/4 tsp allspice
1/4 tsp ginger
1 1/2 tbsp maple syrup
1/2 tbsp soy sauce
100 ml cider vinegar

Cook the onions and garlic in a dribble of water until they soften, then add in all the other ingredients.

Bring it to the boil then turn to a low simmer and leave it with the lid off for about 20 minutes.  You’ll need to stir it every few minutes so it doesn’t stick.

Let it cool, then blend it.  It makes about 300 ml and keeps for about a week in the fridge.  Or so they tell me.  Every time I make this it gets eaten well before a week is up.
